Creamy Lemon Chicken

How to make it?

Slice each chicken breast horizontally to create two thin pieces, giving you four pieces in total.

Sprinkle each side with salt and pepper. Coat the chicken with flour and shake to remove any excess.

Put the butter and oil in a large frying pan over a medium-high heat. Heat until the butter melts and the oil and butter mix together.

Add the chicken to the pan and cook the first side until golden. Turn and cook the other side until it is golden too. Take the chicken out of the pan and put on a plate.

Turn the heat down to medium. Add ¼ cup of chicken broth/stock and heat until it simmers. Scrape the brown bits on the bottom of the pan into the liquid. Add the remaining chicken broth/stock and the cream. Simmer for two minutes until slightly thickened. It doesn't have to be too thick as the sauce thickens more as it cools while serving.

Stir in the lemon juice and season to taste with salt and pepper. The amount of lemon added can be adjusted according to taste.

Put the chicken back in the pan, including any juices on the plate. Cook for one minute to reheat the chicken and further thicken sauce.

Serve with pasta or mashed potatoes and sprinkle with fresh Leek. Pour the lemon cream sauce into a sauce jug and serve on the side.
