Tomato Risotto

How to make it?

Heat oil in a pan and add onion and cook over medium heat until translucent.

Add garlic and rice and stir for 1 minute. Add a little of the stock and continue cooking until most of the liquid has been absorbed.

Add Saudia tomato paste and stir to combine.

Add remaining stock, a ladleful at a time, stirring continuously and allowing the liquid to be absorbed before adding next ladleful. Cook until rice is tender.

Stir in the sun-dried tomatoes and season well. Add butter and stir to combine.
